Shinji Kanesaka may not have a movie made about him, but he’s a superstar in the sushi world. Despite only being in his 30s, he has established a small empire of starred sushi-ya outlets: his eponymously named Kanesaka, Iwa, Ichiyanagi and Saito. While the latter may have usurped the master in Michelin étoiles, it is his Kanesaka shop that I most often return to for the consistently excellent Edomae sushi, cosy ambience and welcoming service; it’s also easier to book. Ask to be seated in front of the man himself, or Shimpei-san, his gregarious head chef, whose precise technique and cheerful demeanour ensures you’ll have an enjoyable experience. Make it a meal to remember and order the omakase course – it’s the best way to fully appreciate their sublime Edomae sushi.
