The woman who runs Sushi Aoki Ginza has been in the business for 40 years and the eatery itself has been awarded with a Michelin Star, so you know it’s going to be delicious. The space is minimalist yet the highly focused chefs prepare your sushi right before your eyes and that in itself is all that’s visually needed. The produce is unbelievably fresh, and they use fresh wasabi, ground to order, which has a deeper more intense flavour than the kind we’re used to. I would highly recommend ‘ika’, squid nigiri, perfectly simple and luxuriously tender, you’ve never had squid like this before.
