Heeding the need for exotic and flavourful summer fare, the celebrated institution has unveiled its second Sydney outpost. Spreading their vibrant atmosphere across three-storeys in the heart of Surry Hills. The creative mix of pan-Asian dishes — inspired by Taiwanese-born proprietor Mamasan Gemma’s childhood in Japan — include famed favourites from the Taiwanese night markets laced with a modern Japanese influence.
The extensive menu of both big and small plates vary from snapper and kingfish dumplings to Taiwanese BBQ quail, Mongolian chilli lamb cutlets, and one of the chef’s signatures – ‘Fish on Fire’ where miso marinated salmon is sandwiched between cedar wood paper before being smoked and served within glowing embers.
